We have a long standing tradition in our house that every Sunday is pancakes for breakfast. It brings us all together in the kitchen and sets us up for a fun filled day. What I don’t love about Pancake Sundays is the very few basic ingredients that makeup traditional pancakes- until of course I created my own version. When my kids did eat basic pancakes made with white flour, sugar (!) milk and an egg, they were hungry again in no time due to the lack of protein or healthy fats, and we needed to make them yet another breakfast to keep them satisfied! Not to mention the little nutrient value the original pancakes provided….
These Banana Protein Pancakes are loaded with protein and carbs making them the perfect breakfast. Add some coconut yoghurt and you’re good to go- a breaky complete with all of the vital macros nutrients. Give them a go and let me know if your tribe love them too!
Serves 1
Ingredients
-1 banana
-1 scoop of protein powder (I use bulk nutrients natural vanilla as it’s made from grass feed cows milk whey)
-1/3 cup of oat bran
-1 tablespoon of psyllium husks
-1 whole egg
-3 egg whites
-coconut yoghurt, berries, maple syrup and cinnamon for topping
What’s Next?….
1- Mix all ingredients except topping in a food processor and blend until combined
2-Heat a frypan to medium heat and add a little coconut oil to melt
3-Pour 1/3 mixture into pan and cook until bubbles start to form, then flip and cook the other side
4-Place the pancakes in a stack and add toppings- ENJOY!
