Gelatin, and in particular gelatin gummies have been all the rage for some time now, and rightly so! These little bite sized treats are not only yummy, kid friendly and simple to prepare, but are loaded with gut and skin healing benefits.

Gelatin contains 2 amino acids, gylcine and proline. Glycine in particular, is beneficial to the gut lining, and helps with repairing the mucosal lining of the gut when leaky gut is experienced. Proline has been shown to have anti-ageing properties, assisting with wound healing, and also beneficial to the gut.

So we can all do with a bit of gelatin in our lives!!

These gummies are always a hit with the kids. They devour them quicker than I can pop them out of the silicone moulds! Give them a go and let me know what you think.

Ingredients

1 cup of organic blueberries (frozen or fresh will do)

1/2 cup of coconut cream

3 1/2 tablespoons of gelatin

1/3 cup of coconut water to bloom the gelatin

1-2 teaspoons of maple syrup (adjust according to desired taste)

What’s next?…

1- Bloom the gelatin by placing it in a small bowl with the cold coconut water and mixing until it forms a rubbery consistence.

2- In a small saucepan, add the blueberries and coconut cream and heat until just about boiling.

3- Add bloomed gelatin to hot berry coconut mix and stir until the gelatin is fully dissolved.

4- Transfer to a deep container, I use a plastic pouring jug with a spout.

5- Using a stick blender, blend the mixture until blueberries are totally blitzed and there are no lumps.

6- Pour into silicone moulds. If you don’t have them, you can line a container (lunchboxes work well) with cling wrap, making sure there is excess to line the sides and for ease when removing, and pour the mixture in.

7- Transfer to the fridge to set, before popping out of the moulds. If you used the container method, pull the set gummie mixture out of the lunch box using the cling wrap and slice into small bite size pieces.

8- Store in the fridge in an airtight container.
