One of my favourite memories as a child is baking with my mum, it has most definitely spurred my passion in the kitchen!

This is such a fun recipe that you can make with kids at any age. The avocado honestly makes this slice so fudgey and morish, make this your next baking project!

Ingredients

1 avocado
1/2 cup honey
1/2 cup cacao powder
1 tsp vanilla bean
1 cup coconut flour (or any flour of choice)
1/2 cup shredded coconut
3 eggs
1/4 cup olive oil

What’s next?….

1. Preheat the oven to 160 degrees and line a small baking tin.

2. Blend together 1/2 of the avocado, eggs, 1/4 cup honey, vanilla bean and olive oil together to make the wet part of the base.

3. Mix through the coconut flour, shredded coconut and 1/4 cup cacao powder until well combined.

4. Pour mixture in baking tin and bake for 20 minutes.

5. Whilst you are waiting for the slice to cook, blend together the icing ingredients using the other 1/2 of the avocado, 1/4 cup honey and 1/4 cup cacao powder until well combined.

6. Once slice is cooked and cooled, spread the avocado ganache on top and sprinkle with coconut.
