Need a birthday cake that isn’t’ full of crap but is still super tasty?!
Look no further, you will love my chocolate chickpea cake!
Trust me on this one, it is super moist and decadent. Plus – it is gluten, dairy & nut free too which accommodates those intolerances!
Ingredients
1 tin of chickpeas (plus 3 Tbsp of the chickpea liquid)
4 eggs
2/3 cup cacao or cocoa powder
1 cup of brown sugar
½ cup milk of choice (I used almond milk, but to make this nut free you could use coconut milk!)
1 Tbsp baking powder
1 tsp vanilla essence
Pinch of salt
What’s next?….
1. Preheat the oven to 180 degrees Celsius and line a cake tin with baking paper.
2. Beat the eggs in a large bowl, place aside.
3. Blend the chickpeas with chickpea juice, vanilla essence and milk of choice until smooth then fold through the eggs.
4. Add all dry ingredients and stir until well combined.
5. Pour mixture into a baking tin, and bake for 45 minutes.
6. Allow cake to cool slightly then serve!
