Oats has got to be my ultimate comfort food warm, creamy and better yet – so damn healthy for you!
Don’t be afraid of the egg whites in this recipe, it may sound weird, however it actually makes the porridge super creamy and adds a source of protein to keep you fuller for longer.
Serves 1 (with leftover toppings)
Ingredients
1/2 cup oats
1/2 cup egg whites
1 cup water or milk of choice
1/2 tsp cinnamon
Stewed apples:
1 Tbsp maple syrup
1 tsp cinnamon
1/4 cup water
Crumble topping:
1 Tbsp brown sugar
2 Tbsp flaked coconut
2 Tbsp macadamias
What’s next?….
1. Add the almond milk, cinnamon and oats to a pot over medium heat. Bring the milk to a gentle boil and continue to cook for two to three minutes or until the oats begin to soften and thicken.
2. Slowly stir through the egg whites and continue to stir until the porridge becomes thick and creamy. Pour into a wide bowl.
3. For the stewed apples, chop up the apple into small cubes and place in a pan with the other ingredients. Stir until soft then place aside.
4. For the crumble topping, add all ingredients into a non stick pan and sauté for 2-3 mins or until golden. Place aside.
5. When you are ready to assemble, divide half of the apples into the bowl and sprinkle with the crumble topping. Store away the leftovers for the next day.
