I’m always looking at creating healthy nutritious snacks for my kids lunch boxes that are nut free due to having a no nuts policy at school…These cookies are just that!!
Tasty and simple and gluten and nut free, they are loaded with vitamins and healthy fats, keeping the kids fuller for longer.
Gluten-free, dairy-free, vegetarian, vegan.
Ingredients
1/2 cup of sesame seeds
1/2 cup pepitas
2 tablespoons of melted coconut oil
2 tablespoons chia seeds
2 tablespoons of cranberries
1 tablespoon of tahini
1/3 cup of shredded coconut
1/3 cup of sultanas
10-12 dates
Good quality 70% + dark chocolate melted to decorate (optional)
What’s next?….
1. Place all ingredients except coconut and sultanas into a blender and and blitz until grainy.
2. Add shredded coconut and sultanas and pulse combining with the mixture.
3. Using a tablespoon scoop, and press into cookies.
4. Drizzle melted chocolate over the top and place in the fridge to set.
5. Store in an airtight container in the fridge for up to 5 days (if they last that long ).
