Our family went squidding the other day and caught some fresh squid (… and got covered in black ink)
Squid is such an underrated protein it is a great source of protein, omega-3, vitamin C and calcium whilst being low in calories!
So, what better way than to make my fave salt & pepper squid?!
Ingredients
3 fresh squid tubes, diced into rings (or approx. 400 g of squid)
¼ cup wholemeal flour (can sub for gf)
1 egg
2 tsp salt
2 tsp pepper
1-2 Tbsp extra virgin olive oil

What’s next?….
1. Decide on cooking method –
a. If using an airfryer, preheat to 180 degrees celcius.
b. If using the oven, preheat to 180 degrees celcius and line a baking tray with baking paper.
2. Mix the flour with the salt and pepper in a wide bowl. Set aside.
3. Whisk the egg in a separate bowl. Set aside.
4. Dip the calamari in the egg, shaking off the excess, then into the flour mixture to coat. Repeat with all squid.
5. Spread out the squid either in the airfryer or the baking tray and drizzle with olive oil.
a. If using the oven, bake for 15-20 minutes, turning halfway.
b. If using the airfryer, bake for 5 minutes, turn over, then bake for another 5 minutes.
6. Enjoy! This one’s a family favourite and tastes even better with fresh squid.
