As a child I never liked turkish delight chocolate, and avoided them like the plague in the boxes of Cadbury Favourites my beautiful Nan used to buy my brothers and I. They were always the ones left at the bottom of the box that no one wanted! Now, I LOVE THEM and since creating this recipe, I can’t stop at one!
Sweetened with dates and cranberries, they are still an “occasional” treat and I don’t recommend eating them all once! That’s the difficult part….. But they are a great treat and perfect for special occasions where you need to take something sweet to impress friends, family and work colleagues.
Ingredients
1/2 cup of dried cranberries (sugar free if you can find them)
1/2 cup of almond meal
1/2 cup of coconut
2 tablespoons of rose water (found in specialty stores, this is what gives it that turkish delight taste so it’s a must)
1 tablespoon of melted coconut oil
1/2 cup of medjool dates
2 heaped tablespoons of cacao
70-80% dark chocolate, melted for coating
Pistachios and extra chopped cranberries to garnish
What’s next….
1. Place all ingredients except chocolate, pistachios and extra chopped cranberries into a food processor and blitz until well combined and easy to roll into balls
2.Roll into balls and place on a tray lined in baking paper. IMPORTANT- baking paper will stop the balls from sticking on the plate when they set. Pop them into the fridge or freezer to set for 15 mins. This helps set the melted chocolate coating.
3.Rolls balls in the chocolate to coat and place back on the baking paper and sprinkle with chopped cranberries and pistachios, and allow to set and harden.
4. Keep refridgerated in an airtight container for up to 7 days.
