This salad is super simple to create and delicious! Think caramelised pumpkin with turmeric spiced cauliflower, with a hint of sweetness from cranberries and a creamy tahini dressing.

Ingredients

For the veggies :

1/2 a head of cauliflower, chopped into florets 

3 cups of pumpkin, chopped

3 cups of baby spinach, washed  and dried 

1 red onion, cut into wedges

1/3 – 1/2 cup of dried cranberries

1/3 cup of pistachios 

1 Tbsp extra virgin olive oil

1 tsp turmeric powder

1 tsp salt

For the dressing: 

1 tablespoon tahini

1 tablespoon of apple cider vinegar

1 tablespoon of honey 

1 tablespoon seeded mustard

1 tablespoon olive oil 

 

What’s next?….

1. Preheat oven to 10 degrees 
2. Place the pumpkin, red onion and cauliflower into a plastic freezer bag or bowl and add olive oil and turmeric and shake or mix until veggie are all covered 
3. Place these veggies onto a lined baking tray and bake until cooked through- stir often to avoid burning the cauliflower. Once cooked, remove form oven to cool.
4. In a small bowl, mix all the dressing ingredients until well combined and no lumps. You may need to add more oil or apple cider to blend well 
5. Place spinach into a salad bowl, and place roasted veggies on top. 

6. Sprinkle over cranberries and pistachios, and pout dressing over the top
