This Chicken & Pumpkin Gnocchi went down an absolute treat with the family

Serves 4


600gm of chicken thighs, chopped into chunks
1 cup of grated pumpkin
1 cup grated zucchini
1 onion, diced
2 cloves of garlic, chopped fine
½ cup of sundried tomato pesto
350mls of passata
½ cup diced button mushrooms
2 tablespoons of fresh basil, chopped fine (can use 1 tablespoon of dried basil if you like)
1 packet of gnocchi
Olive oil for cooking

What’s next?….

1. Bring to the boil a medium size saucepan of salted water to cook the gnocchi.
2. Heat a small splash of oil in the fry pan and cook onion and garlic on medium heat till brown
3. Add chicken and cook till just brown
4. Add carrot, mushroom and zucchini, and cook till starting to soften
5. Pour in passata and pesto and stir through the basil.
6. Turn heat down to low and simmer until passata is cooked and sauce starts to thicken, then remove from the heat.
7. Add gnocchi to the saucepan of boiling water and cook. When the gnocchi starts to float on top of the water it is ready, Drain and place into 4 bowls
8. Spoon chicken mixture over the top of the gnocchi and enjoy!
