Ingredients

5 cups of broccoli chopped into small pieces (1.5-2 broccoli heads)
½ cup or dried cranberries
½ red onion, diced
1/3 cup of roasted almond flakes
1 stalk of celery, chopped finely
1 avocado
1/3 cup of whole egg mayonnaise (I use @gevityrx Great Guts Bone Broth Mayonnaise)
1 lemon juiced and rind grated
Salt and pepper to taste

What’s next?….

Method
1. Place broccoli, onion, cranberries and celery into a medium salad bowl
2. In a small add the avocado, mayonnaise, lemon juice and rind and salt and pepper and whisk to make a creamy dressing
3. Fold the dressing through the broccoli mixture
4. Scatter roasted almonds on top and serve.
Yum! I love to have this alongside Christmas Day mains or simply a festive BBQ.
