Gut health has been in the spot light for some time now, and with good reason.  70-80% of immunity comes from optimal gut health. In today’s modern society, many factors influence the health of out gut. The foods we eat, environmental toxins, stressful hectic schedules, all influence the integrity of our gut linings. Leaky gut is becoming more and more prevalent, with many people experiencing symptoms such as allergies, skin problems, food intolerance, mental health issues, digestive upsets, and auto immune diseases. There are a number of things you can do to improve the integrity of your gut lining. Some recommendations include:

-Consuming a wide variety of whole foods such as fruits and vegetables, anti-inflammatory grains, grass fed meats, and organic dairy

-Reduce sugar and processed food

-Consume fermented foods and beverages to allow for a more diverse variety of gut bacteria

-Reduce stress

Gelatin gummies are a great way of improving the integrity of the gut lining by helping to heal leaky gut. The gelatin aids in closing the open junctions of the gut lining, often seen in leaky gut, and preventing permeability. Gelatin also improves your ability to produce digestive enzymes and stomach acid, important for the digestion of the foods we eat.

The kids love this variation of gummies and they certainly don’t last long in the fridge at our place! Get experimenting with flavours! We have substituted the strawberries with blueberries, have used coconut water instead of coconut cream- the combinations are endless! Provided you keep the liquid quantities the same, you can literally make any flavoured gummies you like.

Ingredients

1 cup of organic strawberries

1/2 cup of coconut cream

3 tablespoons of gelatin

1 teaspoon of honey (optional)

1/3 cup of cold water to bloom gelatin

What’s Next?….

1-Place the berries and coconut milk in a small saucepan and simmer until hot but not boiling

2-While you wait, bloom the gelatin in a small bowl with the cold water. It will look like a blob of rubber- this is normal!

3-Once the berry and coconut mixture is hot, remove from the heat, break up the gelatin and stir vigorously until the gelatin is melted through the mixture. I have used a hand held blender stick to do this for me and to make sure there are no lumps gelatin left.

4-Pour gelatin into silicone moulds, or if you have a lunch box or plastic container, you can pour the whole lot in the base and cut it once it is set in the fridge for an hour.

5- Store in an air tight container for up to 5 days- if they last that long!
